The zucchini boat post

The zucchini boat was introduced to me by my step-mom several years ago. She hallowed out the zucchini, topped it with a little EVOO, garlic powder and filled it with cream cheese.

Delicious.

But I knew I could take this overlooked vegetable and make it shine... and the evolution of the zucchini boat, known to some as the Goat Boat has been rather extraordinary.

I get A LOT of questions about goat boats, so without further adieu... I present to you, my beloved goat boat recipe.

Well, there isn't actually a recipe*... haha.

You simply slice the zucchini** in half, and use the tip of a spoon to remove the seeds which creates a little canal.

I then use a silicone brush to apply the glaze, which can be just about ANYTHING. EVOO works, but my favorite thing to use are the Kraft Signature Dressings; especially the Fig Balsamic dressing.

Top it with a little S&P.

Then take some goat cheese and crumble it on top. The great thing about goat cheese, is that a little goes a looooong way. Its so flavourful.

Put it on the BBQ for abut 15-20 mins, and enjoy.

It's simple, easy and delicious!

The other great thing is how versatile they can be, when you start mixing and matching the glaze with flavoured goat cheese.

Fig balsamic + fig and orange goat cheese
Pesto dressing + herby goat cheese
Sun dried tomato + roasted garlic goat cheese

Check the deli section at your grocery store for the various goat cheeses, there are a million of them.

Thanks for posting this, Amy! Every time you make them I start to drool. I love zuke (easier to spell) and have yet to meet a cheese I don't like. How could I not love these?

I made these last night! I made a spread with fresh garlic, fresh basil, chili flakes, salt and margerine, then I topped with feta. SO GOOD!!
