I sent this email out to my colleagues last week:
I like to bake - but I don't like to have baked goods in the house. I know many of my colleagues feel the same way.
How about a "Bake Off" on Monday April 2nd? What is a bake off you ask? Well it's my fancy way of saying "Make something delicious and bring it to the office to share" No rules, no judging, but I was thinking of keeping it to a Spring/Easter theme. If you want to bake something - great, if you want to eat - even better!
I'm thinking a team coffee break with treats at 10:00am on April 2nd. Who's in?
Based on the amount of responses, April 2nd is going to be a pretty gluttnous day.
This isn't my first time hosting a bake-off. You may recall this Hallowe'en one.
Here's the interesting part about this one: I gave up chocolate for Lent.
This eliminates A LOT of Easter'ish options. I know I won't be able to eat many of my colleagues contributions (blessing in disguise?) but I want to be able to taste my creation to make sure it tastes good.
I found this recipe on Pinterest (where else?) for Lemon Brownies. I think I have a winner!

I also may have entered into a bake-off with my cousin for pies at Easter dinner. I think I may have bitten off a little more than I can chew on that one, especially since I've never made a pie in my life.
We'll see how that one goes. Good thing I'm on holidays next week. I'll have ample time to prepare!

Ooh, lemon brownies! I'm making lemon squares tonight for a potluck at work tomorrow....they are sooo good and super easy. If you want the recipe let me know!
I looooove lemon squares so will have to try these. They look awesome.
Also, making pies is way easier than you think. My best tip is to 'cut' the crisco/shortening in with 2 butter knives is you don't have a pastry doohickey (can't remember what they're called but i don't have one). You put the dry stuff together, toss in the room temp shortening and slice it over and over until the mix looks like crumbs Youtube it if this makes no sense!). Makes a flaky, delicious crust every time!
Also, i tend to just make up fillings. All you need is fruit of your choice, and add about half a cup of flour, half a cup of sugar (or less). Mix with the fruit and pour into the shell. If you're using something like apples you can add a bit of cinnamon or nutmeg, its easy! Make sure to heap it up high because it will reduce quite a bit. =) Good Luck!

I love lemon baked goods. I also love to bake, but also love to eat, so try not to do it too much!
My tip with pies is to use Martha's pate brise recipe. I make it in my food processor and it has never failed me.

I used to be a good baker, but now I rarely bake because there is only myself and my husband to eat it so I'm way out of practice. Those lemon brownies look yummy! :)
Try to make sure the washer and dryer are on the same floor as the bedroom. This makes putting clothes away a much easy and quicker chore.
