Work has been sucking the life out of me lately. By quitting time the only thing I want to do is go home, get into my PJs and watch Y&R on the couch snuggled with my little Samuel.
Last night, I had plans to do that... but then the "healthy living" side of my brain chirped in and I decided to hit Body Attack instead of indulge in a little Victor Newman.
Speaking of the Newmans... ummm... could Nick Newman be any hotter of late? MEOW!
I'm so happy to got that workout in. It totally changed my blah mood, and gave me the second wind to spend some time in the kitchen. Thought I would share both of the recipes, as they are both fantastic!
Up first - Martha Stewart's Quick Moussaka.
This is the second time I've made this recipe and I absolutely LOVE it. The secret? The top has a ricotta/feta mixture instead of a béchamel sauce. The eggplant is roasted too, which gives it some pretty awesome flavour. I'm not even a huge eggplant fan but this recipe is a keeper!
Up next were Peanut Butter Chocolate Chip Quinoa Cookies - found on Pinterest of course.
The was some speculation on the recipe page about the cookies not sticking together - so I followed the bloggers advice and used warm quinoa which melted the chocolate chips to act as a glue.
I made one pan of cookies, and pressed the rest into a mini muffin tin.
Perfect little sweet treat!
Can't wait for the leftovers today.
