iPhone Pumpkin Pancakes

Yesterday was a chilly fall day. I may or may not have been totally depressed as a result of my boyfriend Derek Jeter's injury.

I wanted something fall-like for breakfast, so I Googled "Pumpkin Pancakes" and away I went. This recipe was ok as is, but I found it lacked in flavor so I added some more spices and thinned it out with a bit more milk. The end result was pretty fantastic.

It wasn't until I  was walking downstairs to eat in front of the TV when I thought I should take a pic for the blog. I present iPhone Pumpkin Pancakes!

The topper was some apples cooked on the stove top in a little water, cinnamon, brown sugar, raisins and craisins - cooked down until a syrup formed and the apples were soft. And a dallop of cool-whip. Pancakes must have cool-whip.

Or is that cool Hwhip? I'm not a huge Family Guy but this clip makes me roar a little bit.

Have a great Monday!
