Jalapeno Popper Chicken and Costco Staples

I saw this idea over on Pinterest, but I was too lazy to look up the actual pin so I just did a little Google'age and came up with this recipe.


Ok.. that's NOT the recipe I used, but it's the same ingredients. The recipe I used told me to cut each breast in half and pound it. So that's what I did and I absolutely LOOOOVED this recipe. Next time I might use a spicier pepper though... I like a little bit more heat.

I served it with steamed green beans with a little veggie seasoning and Eat Smart Sweet Kale Salad from Costco. 

This salad is absolutely delicious. By far my favorite Costco discovery of late.

Mine are:
- Chicken breasts
- Salmon
- Broccoli
- Brussel Sprouts
- yogurt

I love that Sweet Kale salad. So does everyone else, apparently; we were there on Saturday and all that was left was empty boxes. :(

I just finished the last of the sweet kale salad on Saturday, it's DELICIOUS!!

I bought the 0% oikos coconut yogurt there this weekend

I'm definitely adding that salad to my shopping list for next time. I always have a jar of roasted red peppers, eggs & egg whites & pop chips

i LOVE costco. our staples are:
- salmon
- those chicken/turkey sausages with only 6g fat per sausage
- laughing cow light
- crabstick
- spinach
- photos (better quality than Loblaws and a few cents cheapers per print!)
- turkey bites

its funny because those things should only be about $50 but somehow we end up spending well over $150 each time we go.
