My Fitness Pal is certainly buzzing with motivation these days, I'm loving it!
For me personally, the secret to staying on track and accountable is to plan meals ahead of time. I'm a huge fan of leftovers for lunch, so I love making casseroles, soups etc.
My darling Angiealltheway posted something similar on MFP the other day, and it got me thinking about my favorite go-to healthy meals.
I loooove Mama Pea's Zuchinni Quinoa Lasagna - although the recipe seems to me MIA since the last time I posted it? I'm sure you could do some Googling to find it though?
This is my new favorite meal - spaghetti squash with chicken and sun dried tomatoes. So tasty, so healthy!
If you're looking to get in some veggies, how about some cucumber dill salad?
Turkey/Sweet Potato/Kale enchiladas are a staple chez-moi.
I realize the gnocchi isn't the healthiest thing in the world, but this recipe for Gnocchi with Chard and White Beans is absolutely deeeelicious!
I hate eggs - but tortilla quiche is quasi palatable and doesn't make me gag.
And my absolute favorite recipe? Peanutty Soup!

Anything that can go in my crockpot and produce copious amounts of left overs or healthy baked snacks that keep me away from the bad stuff... like the muffins I posted yesterday, or sweet potato brownies, etc!

I also always plan my meals on Sundays for the week...this week it's spaghetti Monday, lasagna Tuesday, chicken stir fry Wednesday, leftover beef cubes/vegssss/bows stew Thursday...and Friday will be a surprise ;)

I've been meal planning the past two weeks and it has helped. My go to meals are Taco salad bowls, Mexican shephards pie, and crustless quiches.I must try out the tortilla one :)
